I assume it's because the cover was already black.  The Death Star is using the standard "blue/black" coloring, so they needed a third option for Vader. hm

They also have Luke and Obi Wan holding red lightsabers, so the colorist may have just done whatever "popped" instead of what was in the movie.

yes, that is true, as Vader's black helmet would have been hard to see against the dark blue color of space backdrop. Chaykin's original SW poster #1 before Hildebrandt's:
